Little bit of butter or margarine
1/4c egg whites (or 2 eggs)
Pinch of cheese (I use about a tbsp of Kraft Mexicanna finely shredded)
Couple spinach leaves shredded
Diced red pepper
Splash of milk
A little less than 1 tbsp flour
Seasoning (I use a very small pinch of pepper and a little onion powder)
- Preheat oven to 350
- Put a little butter/margarine in a ramekin and put in oven to melt and get sizzley
- Mix flour and milk together until pretty smooth
- mix eggs, cheese, red pepper, spinach, and milk/flour together
- season to taste
- Pour into hot and sizzley ramekin and bake for 20-25 minutes or until top is golden brown and set
** You can skip the flour, but I find it makes an almost yorkshire(ish) small crust on the bottom that I love.
** Butter will give you a more golden and crunchy finish to the top
**It'll come out of the oven really puffed up and pretty, but it will fall a bit as it cools.
