I am trying to cook healthier. When hubby is away, I have a tenancy to pull out the chicken strips and oven fries for supper. It's hard when you are essentially cooking for one and a half. Especially when that half is a four year old boy, who has an opinion about EVERYTHING you put in front of him. Anywhoo, I've seen a lot of people talking about stuffed peppers lately and thought I'd give it a whirl. I didn't really follow any specific recipe or anything and they turned out.....
...AMAZING! Why have I not made them before?? Trent ate an entire pepper (or I guess half a pepper) and even licked his plate clean. I say that's a #mommywin for sure! I am a kitchen winger, so I don't have exact measurements and I tend to eyeball stuff... So here's what I did:
What You Need:
3 Bell Peppers (I used orange)
Lean ground meat (about a pound - I used lean ground beef, but ground chicken/turkey/bison would all be tasty too)
Rice (1/2 cup)
Can of diced tomatoes (I used PC garlic and olive oil diced tomatoes)
Celery (1 stalk)
Onion (depending on how oniony you like things, I diced up about 2 tbsp worth)
Frozen corn
Taco seasoning or chili powder (I used Epicure's Taco Seasoning)
What To Do:
Put your rice on to cook. Brown your meat, adding diced celery and onion. Wash your peppers, and cut in half (scoop out the seeds and stuff). When your meat is cooked, add some drained diced tomatoes, seasoning (I used 1/2 tbsp), and frozen corn (I used a bit more than 1/4c). Once your rice is cooked, stir that in to your meat mixture. Spoon into your peppers and sprinkle with a little cheese if you'd like. Bake for about 30 minutes at 350.
I only made 3 (half) peppers, because it was just me and Trent, but I had more than enough filling to easily make 6 (half) pepper. Next time I make this I think I'd add some black beans to the mix as well. YUMMY!
