Breakfast for One

Shawn is usually out of the house before the birds even think about waking up. Trent asserts his growing two year old independence and needs to pick his own cereal or have a major freak out (no thanks, first thing in the morning). So, I'm usually on my own for breakfast.
If I eat a crap breakfast, or skip it entirely, I
  • don't have enough fuel in my tank to really get through everything I want to
  • I become short tempered and get frustrated easier
  • by 2pm my eyes are heavy and my head is doing the nod
  • eat a huge lunch because I'm starving, which in return means I'm not overly hungry for dinner, which means I'll have an un-needed nighttime snack
  • get light headed or nauseous if I work out in the morning
  • make totally bad decisions because of hunger (like eating a bag of chips or scarfing down a chocolate bar without really tasting it)
Knowing all this, it's still an experiment to find decent breakfasts that hold me over. So far, my favorite breakky has been steel cut oats, but they take forever to cook (30 minutes!). I made them this morning for the first time in my slow cooker and VOILA! My favorite, stick to your guts, breakfast is easy and ready first thing in the morning. I'm going to have to experiment with Greek yogurt and eggs again to find a really good combination of 'stick with you', 'taste yummy' and 'good for you'. I'm not asking for much ;)

Here's my recipe for crock pot steel cut oats:
(you're going to use your slow cooker as a double broiler, so you shouldn't get crusty oats on the bottom or around the edges)
  • In a small oven safe bowl (needs to be big enough to fit into your slow cooker) pour 1/2c steel cut oats (this serves two), 2c water, 1tbsp maple syrup, pinch of salt.
  • fill slow cooker 1/2 full with water, place oven safe bowl into slow cooker (make sure the water level in the cooker is about even with the water in your oats bowl)
  • turn on low when you go to bed and 8 hours later (if your lucky to get 8 hours of sleep!) you have creamy, chewy, oats for breakfast!
  • Top with your choice of milk, brown sugar, fruit or our favorites almonds and raisins.
